Most commercial maple syrup is run through reverse osmosis and then flash boiled in gas-powered evaporators. Our small batch maple syrup is boiled by hand, all day, in a wood-fired evaporator. Boiling for 12 hours, instead of one, means twelve times more caramelized sugars and flavors. Ours even has hints of vanilla. People consistently say it is the best maple syrup they've ever had.
